I was watching Lets Do Lunch with Gino D'Acampo and Melanie Sykes and Gino made a fantastico Spaghetti Carbonara. I have seen Gino make this classic carbonara before on a few other tv shows but I decided to give this a try. Gino's classic carbonara contains no cream and very few ofthe ingredients that are used in the uk version of carbonara but it still tastes really creamy but much lighter than the normal creamy carbonara.
If you like carbonara then try Gino D'Acampo's classic spaghetti carbonara and you will never look back, enjoy.
Serves 2
3 free range egg yolks
3 handfuls pancetta, diced
100g salted butter
Handful of parmesan cheese,
Freshly grated salt and pepper, to taste
2. In a saucepan, slowly shallow fry the pancetta in the butter until very crispy.
3. Drain the pasta and add to the cooked pancetta. Mix the eggs yolks with the parmesan and add immediately. Season with salt and pepper and stir very well until you have a creamy texture.
To serve
Sprinkle over more parmesan cheese if desired and serve immediately.

To serve
