So, Christmas is over and we are all now looking forward to the new year. Well, some people are, but like it or loathe it we all love the steak pie at the new year. Some people have it on Hogmanay before the bells and some have it on January 1st. Here is a classic Steak Pie recipe that is sure to please you and your guests but start making this the day before you plan to eat it!
Ingredients
Serves: 6
6 rump steakssalt and pepper to taste
1 tablespoon olive oil
1 onion
2 glasses red wine
1 litre beef stock
2 egg yolks
500g puff pastry
Preparation method
Prep: 20 mins | Cook: 5-6 hours | Extra time: 1 hour cooling and 50 - 60 mins cooking on day 21.
Heat oven to 160 C / Gas 2-3

Cut rump steaks into cubes and season with salt and pepper.

Heat olive oil in pan to high and quickly brown the steak cubes in batches, placing in and oven proof pot or dish once browned.

Chop onion into pieces and mix with steak in the pie dish.

Add the wine to the pot you browned the steak in and reduce by half, scraping all the steak bits and juices from the bottom of the pot. Add beef stock to the wine, mix and heat through

Add the stock and wine to the beef in the oven proof pot/dish, cover tightly with foil or a lid and place in the oven for 4-6 hours at 160 C / Gas 2-3, checking and stirring occasionally.

Once the meat is very tender remove from the oven and allow to cool, then refrigerate overnight to let the meat soak in the juices from the gravy.

The next morning heat oven to 200 C / Gas 6. Remove foil from pie dish and place in oven for 30 minutes. Add more stock if gravy is too thick or cornflour mixed first with cold water if it's not thick enough for you.

Roll out puff pastry and cover pie dish, brush with egg yolk.
10.
Return to oven and cook for a further 20 minutes or until pastry is as brown as you like it.
To serve Serve with green beans or soaked marrow fat peas and mashed potatoes.
